Organic extra virgin olive oil

The type of varieties grown are Ogliarola Salentina and Cellina di Nardò, typical cultivar of the area. The olives are harvested from the tree, never from the ground as normally happens, partly by hand, partly with mechanical shakers. To ensure a very low value of acidity and content of peroxides, our olives are typically milled in the same day of collection, but no later than 24 hours.

The olive harvest begins during the ripening of the fruit and that is when it begins the process of olive color change on the plant that turns from green to black, allowing the milling of olives in different stages of ripeness. Although this process significantly reduces the volume of the collection, it guarantees a greater quality of the product that is significantly richer in precious values such as antioxidants, whose concentration is even greater the more ancient are the trees.

Organic extra virgin olive oil

We were born and raised in Milan. Ten years ago, after having cherished this idea for long, we finally decided to buy a farm in Apulia suited to the cultivation of olive trees and to the production of and extraordinary olive oil. After having carefully evaluated the decision, we finally made a dream come true. The reasons for this choice are based on the desire to get closer to a world far from our urban origins and our daily activities. After the initial enthusiasm and bewilderment to enter into a new and unknown experience , we began familiarizing  ourselves with agriculture, applying strict and clear procedures that naturally leaded us to tho organic production. Other than  the standard production, organic production's  protocols have allowed us to manage and control all the production steps, imposing to have all the phases  verified by certified third parties. Of course, this choice has decreased significantly our production, as we cannot use the ordinary solutions ensured only by chemical products  and used for the traditional practices. Our olive trees are supported and protected only by their natural strength and the consequence is that the trees produce less, but healthy olives. Furthermore we chose to organize  the harvest picking only i the olives still maturing on the plant (less then 1/3 circa of the olives) and not picking the ones already fallen on the ground (as traditional practice does). Last but not least the milling of the olives starts only few hours after the harvest and is cold worked, reducing the yield.

All these actions, together with an intensive plan for the tree's pruning, certainly have an extraordinary impact on the production costs and quantity reduction, but these actions guarantee the highest quality and healthiness we want in our kitchen and on our dining table. This has allowed the production of an organic extra virgin olive oil to us very valuable, which combines the history of olive trees with the attention to the taste and the quality of their fruit. The majesty of these trees, their history and ancientness, have taught us a dutiful respect for places and nature, giving us in return a precious fruit, their oil, their nectar.

The processing The “Olio della Giancamisa” is an extra-virgin organic olive oil from the first pressing, cold pressed, continuous cycle and at a controlled temperature (27 ° C). The milling is carried out in a technologically advanced mill and accredited for organic oil processing. The modern continuous systems ensure excellent quality with the addition of a strict compliance with the rules of the Protocol for the organic oil. The storage is carried out at a controlled temperature in stainless steel tanks. Our oil is then packaged after natural settling, avoiding the mechanical filtration process and the consequent loss of highly nutritious substances, which differentiate a good extra virgin olive oil.
L’olio della Giancamisa The characteristics of the oil can be seen immediately thanks to an intense yellow color, clarity, a fruity aroma, a pleasant smell and a full flavor with a slightly spicy aftertaste. Great especially raw, for its organoleptic characteristics is recommended for demanding and refined palates and is suitable for the preparation of the typical Mediterranean diet.
Packaging “L’Olio della Giancamisa” is sold mainly in 0.5 liter bottles, in cartons of 12 bottles each, or 5 liter cans: this is the more convenient formula for a family consumption. For businesses and individuals who choose “L’Olio della Giancamisa” for their Christmas gifts, gift boxes are also available in different sizes of corrugated cardboard light brown. Bottles of 0.25 l or 3-liter cans are also available made-to-order.
